How To Make Instant Pot Pad Thai Recipe

A quick and easy recipe for the popular Thai dish Pad Thai made in your Instant Pot!

Ingredients

  • 8 oz. Pad Thai rice noodles
  • 1 lb. chicken breasts, sliced into thin strips
  • 1 tbsp. olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 2 tbsp. brown sugar
  • 3 tbsp. soy sauce
  • 3 tbsp. rice vinegar
  • 2 tbsp. fish sauce
  • 1/4 cup peanut butter
  • 1/2 cup water
  • 1 cup bean sprouts
  • 1/4 cup chopped peanuts

Instructions

  1. Soak the rice noodles in hot water for 10-15 minutes.

  2. Turn on the Instant Pot and select the sauté function. Add olive oil, chicken, onion, garlic, and bell pepper. Sauté for 3-5 minutes until the chicken is browned.

  3. Add brown sugar, soy sauce, rice vinegar, fish sauce, peanut butter, and water. Stir until peanut butter is melted.

  4. Drain the rice noodles and add them to the Instant Pot. Stir until well coated in sauce.

  5. Close the Instant Pot lid and turn the vent to sealing. Select high pressure and set timer for 2 minutes.

  6. Once done, do a quick release then add in the bean sprouts and stir. Let sit for 2-3 minutes until the sprouts are wilted.

  7. Serve hot, topped with chopped peanuts.
