Ingredients

  • 1 pound bay scallops
  • 4 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large skillet, melt 2 tablespoons of butter over medium heat.

  2. Add the minced garlic and cook for 1 minute until fragrant.

  3. Add the bay scallops to the skillet and cook for 2-3 minutes per side until they are opaque and cooked through.

  4. Remove the scallops from the skillet and set aside.

  5. In the same skillet, melt the remaining 2 tablespoons of butter.

  6. Stir in the chopped parsley and lemon juice, cooking for 1-2 minutes.

  7. Season with salt and pepper to taste.

  8. Return the cooked scallops to the skillet and toss to coat them with the garlic parsley butter sauce.

  9. Cook for an additional minute until the scallops are heated through.

  10. Serve the bay scallops with garlic parsley butter sauce hot.
