
How To Make Authentic Pad Thai Noodles

Ingredients
- 8 oz Pad Thai noodles
- 2 tbsp vegetable oil
- 8 oz shrimp, peeled and deveined
- 4 oz tofu, cubed
- 3 cloves garlic, minced
- 2 shallots, sliced
- 2 eggs, beaten
- 1 cup bean sprouts
- 2 green onions, sliced
- 1/4 cup crushed peanuts
- 2 tbsp fish sauce
- 2 tbsp tamarind paste
- 1 tbsp soy sauce
- 1 tbsp sugar
- 1/2 tsp chili powder
Instructions

Cook the Pad Thai noodles according to package instructions. Drain and set aside.

In a large wok or skillet, heat the vegetable oil over medium heat. Add the shrimp and tofu, and cook until the shrimp turns pink and the tofu is slightly browned. Remove from the skillet and set aside.

In the same skillet, add the minced garlic and sliced shallots. Stir-fry for about a minute until fragrant.

Push the garlic and shallots to one side of the skillet, and pour the beaten eggs into the empty space. Scramble the eggs until cooked through.

Add the cooked noodles, shrimp, tofu, bean sprouts, and green onions to the skillet. Mix everything together.

In a small bowl, whisk together the fish sauce, tamarind paste, soy sauce, sugar, and chili powder. Pour the sauce over the noodle mixture, and stir well to coat.

Cook for an additional 2-3 minutes until everything is heated through.

Serve the Pad Thai noodles hot, garnished with crushed peanuts.
