How To Make Russian-Style Chicken Cutlets

Whip up this homemade chicken cutlets at home for a tasteful lunch meal! Ground chicken is packed with butter and herbs, then pan-fried for a crispier dish.

Ingredients

  • 2sliceswhite bread,good quality
  • ¼cuphalf and half
  • 1lbground chicken
  • 1egg
  • ½tspsalt
  • ¼tspfresh ground black pepper
  • ½tspdried dill
  • 5tbspbutter
  • 1cupdry bread crumbs
  • 2tbspcooking oil

Instructions

  1. Break the bread into pieces.

  2. In a large bowl, soak the bread in the half-and-half for about 2 minutes, until the liquid is absorbed. Mix in the chicken, egg, salt, pepper, dill and the 3 tablespoons room-temperature butter.

  3. Put in the freezer for about 10 minutes to firm up.

  4. Remove the chicken mixture from the freezer; it will still be very soft. Form the mixture into four oval cutlets and coat them with the bread crumbs.

  5. In a large, nonstick frying pan, heat the remaining 2 tablespoons butter and the oil over moderate heat. Cook the cutlets for 4 to 5 minutes per side, until golden brown and just done.

  6. Serve and enjoy!
