How To Make Stir Fried Rice with Prosciutto and Peas

Bites of soft mozzarella, crunchy prosciutto, and tender peas, tossed with arborio rice makes this stir fried rice dish a delectable lunch meal!

  • cupsarborio rice
  • ½cupfrozen petite peas
  • 6ozfresh mozzarella
  • ½cupparmesan,grated
  • 3tbspbutter
  • 3ozprosciutto,sliced
  • ½tspsalt
  • 3tbspfresh parsley,chopped


  1. Stir the rice into a medium pot of boiling, salted water and cook for about 15 minutes, until almost done. Stir in the peas.

  2. Cook for about 2 minutes longer, until the peas and rice are just done. Drain.

  3. Put the rice and peas back in the hot pot. Stir in the mozzarella, Parmesan, butter, prosciutto, salt, and parsley.

  4. Serve immediately, and enjoy!
