- 8 lamb cutlets
- 2 tbsp olive oil
- 2 cloves of garlic, minced
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- Salt and pepper to taste
- 4 cups of mixed vegetables (such as carrots, bell peppers, zucchini), cut into chunks
- 1 red onion, sliced
- 2 tbsp balsamic vinegar
Instructions

Preheat the oven to 400°F (200°C).

In a small bowl, combine the minced garlic, chopped rosemary, chopped thyme, salt, and pepper.

Rub the lamb cutlets with the herb mixture, ensuring they are well coated.

Heat olive oil in a large skillet over medium-high heat. Cook the lamb cutlets for 3-4 minutes per side, until browned.

Place the browned lamb cutlets on a baking sheet.

In a separate bowl, toss the mixed vegetables and sliced red onion with olive oil, balsamic vinegar, salt, and pepper.
