How To Make Herbed Lamb Cutlets with Roasted Vegetables

  • 8 lamb cutlets
  • 2 tbsp olive oil
  • 2 cloves of garlic, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • Salt and pepper to taste
  • 4 cups of mixed vegetables (such as carrots, bell peppers, zucchini), cut into chunks
  • 1 red onion, sliced
  • 2 tbsp balsamic vinegar


  1. Preheat the oven to 400°F (200°C).

  2. In a small bowl, combine the minced garlic, chopped rosemary, chopped thyme, salt, and pepper.

  3. Rub the lamb cutlets with the herb mixture, ensuring they are well coated.

  4. Heat olive oil in a large skillet over medium-high heat. Cook the lamb cutlets for 3-4 minutes per side, until browned.

  5. Place the browned lamb cutlets on a baking sheet.

  6. In a separate bowl, toss the mixed vegetables and sliced red onion with olive oil, balsamic vinegar, salt, and pepper.

  7. Spread the vegetables around the lamb cutlets on the baking sheet.

  8. Roast in the preheated oven for 20-25 minutes, or until the lamb is cooked to your desired doneness and the vegetables are tender.

  9. Serve the herbed lamb cutlets with the roasted vegetables.
