You only need 15 minutes to prep this ceviche recipe, packed with button mushrooms marinated in a zesty and spicy mix of lemon and chili, for a tasty side.

  • 2garlic cloves,roasted
  • 8ozwhite button mushrooms,sliced thin
  • 1small red onion,sliced
  • ½green bell pepper,sliced into thin strips
  • ½red bell pepper,sliced into thin strips
  • cuplemon juice,freshly squeezed
  • ½cupvegetable broth,Pacific
  • 1tbspcilantro,chopped
  • ¼tsphoney,or agave
  • 1tspjalapeño,finely chopped
  • 1tbspolive oil
  • 1tspkosher salt
  • tspblack pepper


  1. In a cast-iron skillet, roast 2 garlic cloves until brown on each side.

  2. Mash the garlic and place in a large bowl with the mushrooms, red onion, and bell peppers.

  3. In a medium bowl, combine the lemon juice, broth, cilantro, honey, jalapeno, olive oil, salt, and pepper, whisk well, then pour over the mushrooms.

  4. Cover and refrigerate for at least a few hours or overnight.

  5. Serve, and enjoy!
