How To Make Mushroom Ceviche
You only need 15 minutes to prep this ceviche recipe, packed with button mushrooms marinated in a zesty and spicy mix of lemon and chili, for a tasty side.

Ingredients
- 2garlic cloves,roasted
- 8ozwhite button mushrooms,sliced thin
- 1small red onion,sliced
- ½green bell pepper,sliced into thin strips
- ½red bell pepper,sliced into thin strips
- â…“cuplemon juice,freshly squeezed
- ½cupvegetable broth,Pacific
- 1tbspcilantro,chopped
- ¼tsphoney,or agave
- 1tspjalapeño,finely chopped
- 1tbspolive oil
- 1tspkosher salt
- â…›tspblack pepper
Instructions

In a cast-iron skillet, roast 2 garlic cloves until brown on each side.

Mash the garlic and place in a large bowl with the mushrooms, red onion, and bell peppers.

In a medium bowl, combine the lemon juice, broth, cilantro, honey, jalapeno, olive oil, salt, and pepper, whisk well, then pour over the mushrooms.

Cover and refrigerate for at least a few hours or overnight.
