Serves:

Ingredients

  • 4 salmon fillets, cut into chunks
  • 2 bell peppers, cut into chunks
  • 1 red onion, cut into chunks
  • 1/4 cup soy sauce
  • 1/4 cup sweet chilli sauce
  • Juice and zest of 2 limes
  • 2 cloves of garlic, minced
  • 1 tbsp vegetable oil
  • Salt and pepper, to taste
  • Bamboo skewers, soaked in water

Instructions

  1. In a bowl, combine soy sauce, sweet chilli sauce, lime juice and zest, garlic, vegetable oil, salt, and pepper. Mix well.

  2. Thread the salmon, bell peppers, and red onion onto the soaked skewers.

  3. Brush the marinade over the kebabs, making sure to coat all sides.

  4. Preheat grill to medium-high heat.

  5. Grill the kebabs for about 4-5 minutes per side, or until the salmon is cooked through.

  6. Serve the kebabs with extra sweet chilli & lime dip on the side.
