How To Make Spring Greens & Gammon Soup

Ingredients
- 500g gammon, diced
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 leek, sliced
- 500g spring greens, shredded
- 1 bay leaf
- 1 liter chicken or vegetable broth
- Salt and pepper to taste
Instructions

In a large pot, heat some oil and cook the diced gammon until browned. Remove from pot and set aside.

In the same pot, add the diced onion, minced garlic, sliced carrots, chopped celery, and sliced leek. Cook until softened.

Add the shredded spring greens and cook until wilted.

Return the cooked gammon to the pot and add the bay leaf and broth. Bring to a boil, then reduce heat and simmer for 1 hour.

Season with salt and pepper to taste.
