How To Make Smoky Tuna and Bacon Burgers with Lemongrass Aioli

In this unique take on surf and turf, minced smoky tuna are mixed in to make these bacon burgers. They’re light, especially with the lemongrass aioli sauce.

Ingredients

  • 1lbtuna steak
  • 1stripbacon
  • ¼cuplemongrass wet rub,plus 1 tbsp
  • salt and freshly ground pepper
  • vegetable oil
  • ¼cupmayonnaise
  • 4brioche rolls,or hamburger buns
  • red onion,sliced

Instructions

  1. Light a grill.On a work surface, using a sharp knife, cut the tuna into thin strips.

  2. Stack the strips and cut them into cubes.

  3. Add the minced bacon and chop until the tuna is fine and the bacon is evenly mixed in.

  4. Transfer the tuna mixture to a bowl.

  5. Stir in ¼ cup of the lemongrass rub and season lightly with salt and pepper

  6. Using slightly moistened hands, form the tuna mixture into four 4-inch patties.

  7. Brush the tuna patties with oil and season with salt and pepper.

  8. Grill the burgers over moderately high heat for about 6 minutes, turning once, until browned on the outside.

  9. Meanwhile, combine the mayonnaise with the remaining 1 tablespoon of the lemongrass rub and season with salt and pepper.

  10. Set the tuna burgers on the rolls and serve with the aioli and onion slices.
