How To Make Fruity Caribbean Curry

Ingredients

  • 2 tbsp vegetable oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 cup diced pineapple
  • 1 cup diced mango
  • 2 tbsp Caribbean curry powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 can (400ml) coconut milk
  • 1 cup vegetable broth
  • 2 cups cooked chicken, diced
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. Heat oil in a large pot over medium heat. Add onions and garlic, and sauté until fragrant.

  2. Add red and yellow bell peppers, pineapple, and mango. Cook for 5 minutes until softened.

  3. Stir in Caribbean curry powder, cumin, and coriander. Cook for 1 minute until fragrant.

  4. Pour in coconut milk and vegetable broth. Bring to a simmer.

  5. Add cooked chicken and season with salt and pepper. Simmer for 15-20 minutes until flavors are well blended.

  6. Serve the curry over cooked rice or with naan bread. Garnish with fresh cilantro.
