  • 1 pkg meatballs, frozen
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cups cauliflower , cut into florets
  • 2 tbsp butter
  • 3 tbsp flour
  • 1 cup milk
  • Salt, to taste
  • Pepper , to taste
  • 1 tsp nutmeg
  • 2 cups cheddar cheese, shredded


  1. Preheat oven to 350 degrees.
  2. Prepare meatballs according to packaging directions and set aside.
  3. In a large skillet, heat oil and sauté onions until translucent.
  4. Add cauliflower and sauté for a few more minutes.
  5. Add butter and allow to melt completely.
  6. Sprinkle in flour and mix well. Slowly pour in the milk and season with salt, pepper, and nutmeg.

  7. Bring to a boil and immediately reduce heat to a simmer.
  8. Add in about ½ cup of your cheddar cheese and simmer for about 8 minutes as the sauce begins to thicken.

  9. Arrange meatballs in a greased baking dish and evenly spread veggies and sauce over.

  10. Top with remaining cheese and bake for 20 to 30 minutes until bubbly and golden. Serve.
