Ingredients

  • 4 chicken breasts, cut into chunks
  • 1 large aubergine, cut into cubes
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Wooden skewers
  • for the pistachio dukkah:
  • 1/2 cup shelled pistachios
  • 1/4 cup sesame seeds
  • 1 tablespoon coriander seeds
  • 1 tablespoon cumin seeds
  • 1 teaspoon sea salt

Instructions

  1. In a mixing bowl, combine the honey, olive oil, cumin, salt, and black pepper. Add the chicken chunks and aubergine cubes, and toss until well coated. Let it marinate for at least 30 minutes.

  2. Preheat the grill or grill pan over medium heat. Thread the marinated chicken and aubergine onto wooden skewers, alternating between the two.

  3. Grill for about 10-15 minutes, turning occasionally, until the chicken is cooked through and the aubergine is tender.

  4. While the skewers are grilling, prepare the pistachio dukkah. In a dry pan, toast the pistachios, sesame seeds, coriander seeds, and cumin seeds until fragrant. Let them cool and then grind them in a blender or mortar and pestle until they resemble coarse breadcrumbs. Stir in the sea salt.

  5. Serve the honey & cumin chicken and aubergine skewers sprinkled with the pistachio dukkah.
