How To Make Satay Aubergine Skewers

Ingredients
- 2 large aubergines, cut into cubes
- 4 tablespoons peanut butter
- 2 tablespoons soy sauce
- 2 tablespoons lime juice
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 1 teaspoon chili flakes (optional)
- 2 tablespoons vegetable oil
- Salt and pepper, to taste
- Fresh coriander, for garnish
- Lime wedges, for serving
Instructions

In a bowl, mix together peanut butter, soy sauce, lime juice, honey, minced garlic, grated ginger, chili flakes, vegetable oil, salt, and pepper to make the satay marinade.

Thread the aubergine cubes onto skewers and brush them generously with the satay marinade.

Preheat grill or grill pan over medium-high heat. Place the skewers on the grill and cook for about 6-8 minutes per side, or until the aubergines are tender and slightly charred.

Remove the skewers from the grill and garnish with fresh coriander. Serve with lime wedges on the side.
