Ingredients

  • 1 lb chicken breast, cut into strips
  • 1/4 cup soy sauce
  • 2 tablespoons peanut butter
  • 2 tablespoons honey
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 2 cloves garlic, minced
  • 1 tablespoon lime juice
  • 1/4 cup coconut milk
  • Salt and pepper, to taste
  • Wooden skewers, soaked in water

Instructions

  1. In a bowl, combine soy sauce, peanut butter, honey, curry powder, cumin, minced garlic, lime juice, coconut milk, salt, and pepper. Mix well to make the marinade.

  2. Add the chicken breast strips to the marinade and coat them evenly. Let it marinate for at least 1 hour, or overnight for maximum flavor.

  3. Preheat the grill or a grill pan over medium heat.

  4. Thread the marinated chicken onto soaked wooden skewers.

  5. Grill the chicken skewers for about 3-4 minutes per side, or until the chicken is cooked through and slightly charred on the edges.

  6. Serve the chicken satay with peanut sauce or a dipping sauce of your choice.
