Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/4 cup soy sauce
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper (optional)
  • Wooden skewers, soaked in water for 30 minutes
  • Chopped peanuts, for garnish
  • Fresh cilantro, for garnish
  • satay dip:
  • 1/2 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1/2 tablespoon sriracha sauce
  • 1 tablespoon lime juice
  • 1 clove garlic, minced
  • 2-3 tablespoons warm water, to adjust consistency

Instructions

  1. In a bowl, combine soy sauce, olive oil, honey, garlic, turmeric, cumin, and cayenne pepper.

  2. Add chicken cubes to the marinade and toss to coat. Let it marinate for at least 30 minutes, or up to 24 hours in the refrigerator.

  3. Preheat grill to medium heat.

  4. Thread the marinated chicken onto the soaked wooden skewers.

  5. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and nicely charred.

  6. Meanwhile, prepare the satay dip by whisking together peanut butter, soy sauce, honey, sriracha sauce, lime juice, garlic, and warm water until smooth and creamy. Adjust the consistency by adding more warm water if needed.

  7. Serve the grilled chicken skewers with the satay dip, garnished with chopped peanuts and fresh cilantro.
