How To Make Balinese Chicken Satay

Ingredients
- 1 lb chicken breast, cut into small cubes
- 2 cloves garlic, minced
- 1 shallot, chopped
- 2 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tbsp palm sugar or brown sugar
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1 tsp chili powder
- 1 tbsp vegetable oil
- Satay skewers, soaked in water for 30 minutes
- For the peanut sauce:
- 1 cup unsalted peanuts, roasted and finely ground
- 3 tbsp sweet soy sauce
- 1 tbsp tamarind paste
- 1 tbsp palm sugar or brown sugar
- 1/4 cup water
- For garnish:
- Fresh cilantro leaves
- Lime wedges
Instructions

In a bowl, combine the minced garlic, chopped shallot, soy sauce, fish sauce, palm sugar, turmeric powder, coriander powder, cumin powder, chili powder, and vegetable oil to make the marinade.

Add the chicken cubes to the marinade and mix well. Allow the chicken to marinate for at least 1 hour, or overnight for best results.

Preheat the grill or grill pan over medium-high heat.

Thread the marinated chicken onto the soaked skewers.

Grill the chicken skewers for about 5 minutes on each side, or until cooked through and slightly charred.

While the chicken is grilling, prepare the peanut sauce. In a small saucepan, combine the ground peanuts, sweet soy sauce, tamarind paste, palm sugar, and water. Cook over low heat, stirring occasionally, until the sauce thickens.

Serve the grilled chicken satay with the peanut sauce, garnished with fresh cilantro leaves and lime wedges.
