How To Make Italian Chickpea Stew

Ingredients
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 red bell pepper, diced
- 2 teaspoons Italian seasoning
- 1 teaspoon paprika
- 1/2 teaspoon red pepper flakes (optional)
- 2 cans (15 oz each) chickpeas, drained and rinsed
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- Salt and pepper, to taste
- Chopped fresh parsley, for garnish
Instructions

Heat olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until softened.

Add the carrots, celery, and red bell pepper. Cook for about 5 minutes, until the vegetables begin to soften.

Stir in the Italian seasoning, paprika, and red pepper flakes (if using). Cook for another minute to toast the spices.

Add the chickpeas, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.

Season with salt and pepper to taste.

Serve the Italian Chickpea Stew hot, garnished with chopped parsley.
