How To Make Scalloped Corn

Serve some creamy golden side with this scalloped corn. It’s baked with sweet corn and cream of corn topped with crushed crackers for some extra crunch.

  • 30ozcreamed corn
  • 15ozcanned sweet corn,drained
  • 3largeeggs
  • 1cupRitz crackers,divided
  • ½cupunsalted butter,divided
  • ½tspkosher salt
  • ½tsppaprika
  • ¼tspcoarse ground black pepper


  1. Preheat oven to 350 degrees F and spray a 2-quart baking dish with vegetable oil spray.

  2. In a large bowl, whisk together creamed corn, canned sweet corn, eggs, ½ cup Ritz crackers, ¼ cup unsalted butter, salt, paprika, and black pepper.

  3. Pour into baking dish.

  4. Mix remaining ½ cup Ritz crackers with remaining ¼ cup melted butter.

  5. Sprinkle cracker mixture over corn.

  6. Bake for 35 to 40 minutes until crackers are golden brown.
