How To Make Lamb Scouse

Serves:

Ingredients

  • 500g lamb, cubed
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 2 carrots, peeled and sliced
  • 4 potatoes, peeled and diced
  • 2 bay leaves
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 500ml beef or vegetable broth
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the lamb and cook until browned on all sides. Remove from the pot and set aside.

  2. In the same pot, add the onion and garlic. Cook until softened.

  3. Add the carrots, potatoes, bay leaves, thyme, and rosemary to the pot. Stir to combine.

  4. Return the lamb to the pot and pour in the broth. Season with salt and pepper.

  5. Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 2 hours, or until the lamb is tender and the flavors have melded together.

  6. Serve hot, garnished with chopped parsley.
