How To Make Lamb Chops with Hummus & Roasted Tomatoes

  • 8 lamb chops
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp olive oil
  • 1 cup cherry tomatoes
  • 2 cloves of garlic, minced
  • 1 tsp dried oregano
  • 1/2 cup hummus
  • Fresh parsley, for garnish


  1. Preheat the oven to 400°F (200°C).

  2. Season the lamb chops with salt and pepper on both sides.

  3. Heat olive oil in a large skillet over medium-high heat.

  4. Sear the lamb chops for 2-3 minutes on each side, until browned.

  5. Remove the lamb chops from the skillet and transfer them to a baking dish.

  6. In the same skillet, add cherry tomatoes, garlic, and dried oregano. Cook for 5 minutes, until the tomatoes start to soften.

  7. Pour the tomato mixture over the lamb chops in the baking dish.

  8. Bake in the preheated oven for 10-12 minutes for medium-rare, or longer if desired.

  9. Serve the lamb chops with a dollop of hummus and garnish with fresh parsley.
