Ingredients

  • 1 lb lamb loin chops, boneless
  • Salt and black pepper, to taste
  • 2 tbsp olive oil
  • 4 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh mint leaves

Instructions

  1. Season the lamb chops with salt and black pepper.

  2. Heat olive oil in a grill pan or skillet over medium-high heat.

  3. Cook the lamb chops for about 3-4 minutes on each side, or until desired doneness. Remove from heat and let them rest for a few minutes.

  4. Meanwhile, prepare the salad ingredients by combining the mixed greens, cherry tomatoes, cucumber, red onion, feta cheese, and fresh mint leaves in a large bowl.

  5. Slice the rested lamb chops into thin strips and add them to the salad bowl.

  6. Toss all the ingredients together until well combined.

  7. Serve the Lamb, Feta & Mint Salad immediately and enjoy!
