How To Make Lamb, Feta & Mint Salad

Ingredients
- 1 lb lamb loin chops, boneless
- Salt and black pepper, to taste
- 2 tbsp olive oil
- 4 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, thinly sliced
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh mint leaves
Instructions

Heat olive oil in a grill pan or skillet over medium-high heat.

Cook the lamb chops for about 3-4 minutes on each side, or until desired doneness. Remove from heat and let them rest for a few minutes.

Meanwhile, prepare the salad ingredients by combining the mixed greens, cherry tomatoes, cucumber, red onion, feta cheese, and fresh mint leaves in a large bowl.

Slice the rested lamb chops into thin strips and add them to the salad bowl.

Toss all the ingredients together until well combined.
