Ingredients

  • 4 lamb shoulder chops
  • 1 tbsp olive oil
  • 1 onion, thinly sliced
  • 3 cloves of garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 sprigs of rosemary
  • 2 cups beef broth
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 325°F (160°C).

  2. Season the lamb chops with salt and pepper.

  3. Heat the olive oil in a large oven-safe skillet or Dutch oven over medium-high heat.

  4. Sear the lamb chops on both sides until browned, about 3 minutes per side. Remove from the skillet and set aside.

  5. In the same skillet, add the onion, garlic, carrots, and celery. Sauté until softened, about 5 minutes.

  6. Add the rosemary sprigs and cook for another minute.

  7. Return the lamb chops to the skillet and pour in the beef broth.

  8. Cover the skillet with a lid or foil and transfer to the preheated oven.

  9. Braise the lamb chops for 2 hours, or until they are tender and easily pull apart with a fork.

  10. Serve the braised lamb shoulder chops with the vegetables and sauce.
