Ingredients

  • 2 racks of lamb, frenched
  • 1 cup fresh breadcrumbs
  • 1/4 cup fresh parsley, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • For the white bean purée:
  • 2 cans white beans, drained and rinsed
  • 2 cloves garlic, minced
  • 1/4 cup fresh lemon juice
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, combine the breadcrumbs, parsley, minced garlic, dried rosemary, dried thyme, salt, and pepper.

  3. Season the racks of lamb with salt and pepper. Heat olive oil in an oven-safe skillet over high heat.

  4. Sear the racks of lamb on all sides until browned, about 4 minutes per side. Remove the lamb from the skillet.

  5. Coat the racks of lamb with the breadcrumb mixture, pressing it firmly onto the meat.

  6. Place the racks of lamb back into the skillet and transfer to the preheated oven.

  7. Roast for about 20 minutes for medium-rare or until desired doneness.

  8. While the lamb is cooking, prepare the white bean purée. In a food processor, combine the white beans, minced garlic, lemon juice, olive oil, salt, and pepper. Blend until smooth.

  9. Once the lamb is cooked to your liking, remove from the oven and let it rest for a few minutes before slicing.

  10. Serve the herb-crusted rack of lamb with the white bean purée.
