Serves:

Ingredients

  • 2 leeks, sliced
  • 1 tablespoon olive oil
  • 2 cups frozen peas
  • 4 cups vegetable broth
  • 2 cups watercress
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the leeks and cook until softened, about 5 minutes.

  2. Add the frozen peas to the pot and cook for another 2 minutes.

  3. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes.

  4. Stir in the watercress and cook for 2 minutes until wilted.

  5. Use an immersion blender or transfer the soup to a blender to puree until smooth.

  6. Season with salt and pepper to taste.

  7. Serve hot and enjoy!
