Ingredients
- 2 leeks, sliced
- 1 tablespoon olive oil
- 2 cups frozen peas
- 4 cups vegetable broth
- 2 cups watercress
- Salt and pepper to taste
Instructions

Heat the olive oil in a large pot over medium heat. Add the leeks and cook until softened, about 5 minutes.

Add the frozen peas to the pot and cook for another 2 minutes.

Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes.

Stir in the watercress and cook for 2 minutes until wilted.

Use an immersion blender or transfer the soup to a blender to puree until smooth.

Season with salt and pepper to taste.
