How To Make Gnocchi with Creamy Tomato & Spinach Sauce

Ingredients
- 1 lb gnocchi
- 2 tbsp olive oil
- 4 cloves of garlic, minced
- 1 can (14 oz) diced tomatoes
- 1/4 cup tomato paste
- 1 cup heavy cream
- 2 cups baby spinach
- Salt and pepper, to taste
- Grated Parmesan cheese, for serving
Instructions

Cook the gnocchi according to package instructions. Drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant.

Add the diced tomatoes and tomato paste to the skillet. Stir well and simmer for 5 minutes.

Stir in the heavy cream and bring to a gentle simmer.

Add the baby spinach to the skillet and cook until wilted.

Season the sauce with salt and pepper to taste.

Add the cooked gnocchi to the skillet and toss to coat in the sauce.

Serve the gnocchi with a sprinkle of grated Parmesan cheese.
