Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 tsp ground cumin
- 4 carrots, peeled and chopped
- 4 cups vegetable broth
- Salt and pepper, to taste
- Fresh cilantro, for garnish
Instructions

Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until softened.

Stir in the ground cumin and cook for another minute.

Add the chopped carrots and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer until carrots are tender, about 20 minutes.

Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup to a blender and blend until smooth, then return to the pot.

Season with salt and pepper to taste. Serve hot, garnished with fresh cilantro.
