How To Make Spanish Seafood Rice

Serves:
Ingredients
- 2 cups of bomba rice
- 1/2 pound of shrimp, peeled and deveined
- 1/2 pound of mussels, cleaned and debearded
- 1/2 pound of clams, cleaned
- 1/2 pound of squid, sliced into rings
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 teaspoon of smoked paprika
- 1/2 teaspoon of saffron threads
- 4 cups of fish or vegetable broth
- 1/4 cup of olive oil
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions

Heat olive oil in a large, deep pan over medium heat. Add onion, garlic, and red bell pepper. Sauté until softened.

Add shrimp, mussels, clams, and squid to the pan. Cook for a few minutes until the seafood is slightly cooked.

Stir in the rice, smoked paprika, and saffron threads. Cook for a minute to toast the rice and spices.

Pour in the broth and bring to a simmer. Season with salt and pepper.

Reduce heat to low, cover the pan, and let it cook for about 20 minutes or until the rice is tender and the seafood is fully cooked.

Remove from heat and let it sit for 5 minutes. Fluff the rice gently with a fork.

Serve the Spanish Seafood Rice garnished with chopped parsley.
