Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp flour
  • 2 cups unsweetened almond milk
  • 1 tsp dijon mustard
  • 1/4 tsp black pepper
  • 1/8 tsp cayenne pepper
  • 1/2 tsp salt
  • 1 can artichoke hearts, drained and chopped
  • 4 cups baby spinach
  • 1/2 cup bread crumbs

Instructions

  1. Preheat oven to 375 F.

  2. In a large skillet, heat olive oil over medium heat. Add onion and garlic, cook until softened.

  3. Sprinkle flour over the onions, stir constantly for 2 minutes.

  4. Add almond milk, dijon mustard, black pepper, cayenne pepper, and salt, cook for 5 minutes, stirring constantly with a whisk.

  5. Add artichoke hearts and spinach, mix to combine.

  6. Transfer the mixture into a baking dish, sprinkle bread crumbs on top.

  7. Bake for 25 minutes or until the top is golden brown.
