A delicious, creamy and comforting vegan casserole made with butternut squash, covered with crispy breadcrumbs.

Ingredients

  • 1 butternut squash, peeled and cubed
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 can of coconut milk
  • 1 tsp of dried thyme
  • 1 cup of breadcrumbs
  • 2 tbsp of olive oil
  • salt and pepper, to taste

Instructions

  1. Preheat oven to 375°F.

  2. In a skillet, sauté onion and garlic in olive oil until translucent.

  3. Add butternut squash, coconut milk, thyme, salt and pepper. Mix well and let it cook for 10 minutes.

  4. Transfer the mixture to an oven-safe dish and cover it with breadcrumbs.

  5. Bake for 30 minutes or until the top is crispy and golden brown.
