How To Make Vegan Tofu Casserole Recipe

Ingredients
- 1 block of firm tofu, drained and pressed
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 cup sliced mushrooms
- 1 can diced tomatoes
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper to taste
- 1/4 cup nutritional yeast
- 1/4 cup breadcrumbs
Instructions

Preheat oven to 375°F.

In a large skillet, heat oil over medium heat and sauté onion, garlic, and peppers until tender.

Add mushrooms and cook until softened.

Crumble tofu into skillet and stir.

Add diced tomatoes, dried basil, dried oregano, salt, and pepper. Stir to combine.

Transfer tofu mixture to a casserole dish.

Sprinkle nutritional yeast and breadcrumbs on top.
