How To Make Vegan Eggplant Parmesan Casserole Recipe
Layers of eggplant, marinara sauce and vegan cheese baked to perfection.

Ingredients
- 2 medium eggplants, sliced
- 2 cups vegan marinara sauce
- 2 cups vegan mozzarella cheese, shredded
- 1/2 cup vegan parmesan cheese, grated
- 1/4 cup all-purpose flour
- 1/4 cup almond milk
- Salt and pepper to taste
Instructions

Preheat oven to 375°F.

In a small bowl, mix flour and almond milk to make a thick batter.

Dip eggplant slices into batter and then place on a baking sheet. Sprinkle with salt and pepper.

Bake eggplant slices for 15-20 minutes, until golden brown.

In a 9×13 inch baking dish, layer marinara sauce, eggplant slices and vegan cheese. Repeat layers until all ingredients are used up.

Top with grated vegan parmesan cheese.

Bake for 30-35 minutes, until cheese is bubbly and golden brown.

Let cool for 5 minutes before serving.
