How To Make Vegan Eggplant Parmesan Casserole Recipe

Layers of eggplant, marinara sauce and vegan cheese baked to perfection.

Serves:

Ingredients

  • 2 medium eggplants, sliced
  • 2 cups vegan marinara sauce
  • 2 cups vegan mozzarella cheese, shredded
  • 1/2 cup vegan parmesan cheese, grated
  • 1/4 cup all-purpose flour
  • 1/4 cup almond milk
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F.

  2. In a small bowl, mix flour and almond milk to make a thick batter.

  3. Dip eggplant slices into batter and then place on a baking sheet. Sprinkle with salt and pepper.

  4. Bake eggplant slices for 15-20 minutes, until golden brown.

  5. In a 9×13 inch baking dish, layer marinara sauce, eggplant slices and vegan cheese. Repeat layers until all ingredients are used up.

  6. Top with grated vegan parmesan cheese.

  7. Bake for 30-35 minutes, until cheese is bubbly and golden brown.

  8. Let cool for 5 minutes before serving.
