Ingredients

  • 2 large cucumbers, thinly sliced
  • 1 small red onion, thinly sliced
  • 2 red chillies, finely chopped
  • 2 cloves of garlic, minced
  • 2 tablespoons of fresh lime juice
  • 2 tablespoons of fish sauce
  • 1 tablespoon of sugar
  • 1 tablespoon of rice vinegar
  • 1 tablespoon of chopped cilantro
  • 1 tablespoon of chopped mint
  • Salt to taste

Instructions

  1. In a small bowl, whisk together lime juice, fish sauce, sugar, and rice vinegar until the sugar dissolves.

  2. In a large bowl, combine cucumbers, red onion, red chillies, and garlic.

  3. Pour the dressing over the cucumber mixture and toss to combine.

  4. Let the salad marinate for about 10 minutes to allow the flavors to meld.

  5. Sprinkle with chopped cilantro and mint, and season with salt to taste.

  6. Serve chilled and enjoy!
