- 2 large cucumbers, thinly sliced
- 1 small red onion, thinly sliced
- 2 red chillies, finely chopped
- 2 cloves of garlic, minced
- 2 tablespoons of fresh lime juice
- 2 tablespoons of fish sauce
- 1 tablespoon of sugar
- 1 tablespoon of rice vinegar
- 1 tablespoon of chopped cilantro
- 1 tablespoon of chopped mint
- Salt to taste
Instructions

In a small bowl, whisk together lime juice, fish sauce, sugar, and rice vinegar until the sugar dissolves.

In a large bowl, combine cucumbers, red onion, red chillies, and garlic.

Pour the dressing over the cucumber mixture and toss to combine.
