Ingredients
- 1 lb prawns, peeled and deveined
- 2 cups lychees, peeled and pitted
- 1 cucumber, sliced
- 1 red bell pepper, sliced
- 1/2 red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh mint leaves, torn
- 1/4 cup roasted peanuts, crushed
- 1 lime, juiced
- 2 tbsp fish sauce
- 1 tbsp sugar
- 1 Thai chili, minced (optional)
Instructions

In a pot of boiling water, cook the prawns for 2-3 minutes until they turn pink. Drain and set aside.

In a large bowl, combine the lychees, cucumber, bell pepper, red onion, cilantro, and mint leaves.

In a small bowl, whisk together lime juice, fish sauce, sugar, and Thai chili (if using).

Add the prawns to the salad and drizzle with the dressing. Toss gently to combine.

Serve the salad sprinkled with crushed peanuts.
