How To Make Cheesy Chipotle Potato Skins

Ingredients
- 4 large russet potatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon chipotle powder
- 1 cup shredded cheddar cheese
- 1/4 cup chopped green onions
- Sour cream, for serving
Instructions

Preheat the oven to 400°F (200°C).

Scrub the potatoes clean and pat them dry. Pierce each potato with a fork a few times.

Place the potatoes on a baking sheet and rub them with olive oil. Sprinkle salt and chipotle powder evenly over the potatoes.

Bake the potatoes in the preheated oven for 40 minutes, or until the skins are crispy and the insides are fork-tender.

Remove the potatoes from the oven and let them cool slightly. Cut each potato in half lengthwise and scoop out the insides, leaving a thin layer of potato attached to the skin.

Place the potato skins back on the baking sheet. Fill each skin with shredded cheddar cheese and green onions.

Return the potato skins to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
