How To Make Microwave cauliflower, apricot & green olive tagine

Ingredients
- 1 cauliflower, cut into florets
- 1 cup dried apricots, chopped
- 1 cup green olives, pitted
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp ground cinnamon
- 1 tsp paprika
- 1 cup vegetable broth
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
- Cooked couscous or rice (for serving)
Instructions

In a microwave-safe dish, add the olive oil, diced onion, and minced garlic. Microwave on high for 2 minutes or until the onion is softened.

Stir in the ground cumin, ground coriander, ground cinnamon, and paprika. Microwave for another 1 minute to release the flavors.

Add the cauliflower florets, chopped dried apricots, and pitted green olives to the dish. Season with salt and pepper, then pour in the vegetable broth.

Cover the dish loosely with microwave-safe plastic wrap or a microwave-safe lid. Cook on high for 10-12 minutes, or until the cauliflower is tender.

Remove from the microwave and let it sit for a few minutes before carefully removing the plastic wrap or lid.

Garnish with fresh cilantro and serve over cooked couscous or rice.
