Ingredients

  • 8 oz soba noodles
  • 2 tablespoons sesame oil
  • 2 leeks, thinly sliced
  • 2 garlic cloves, minced
  • 1 cup bean sprouts
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey
  • 1 tablespoon sesame seeds
  • Salt and pepper to taste

Instructions

  1. Cook soba noodles according to package instructions. Drain and rinse with cold water. Set aside.

  2. In a large skillet, heat sesame oil over medium heat. Add leeks and garlic, and sauté until leeks are softened, about 5 minutes.

  3. Add cooked noodles, bean sprouts, soy sauce, rice vinegar, honey, sesame seeds, salt, and pepper to the skillet. Stir well to combine and cook for an additional 2 minutes.

  4. Serve hot and garnish with additional sesame seeds if desired.
