Ingredients

  • 8 oz rice noodles
  • 1 cup shredded carrots
  • 1 cup thinly sliced cucumber
  • 1 cup bean sprouts
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped green onions
  • 1/4 cup chopped peanuts
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1 teaspoon minced garlic
  • 1 teaspoon grated ginger
  • 1/2 teaspoon red pepper flakes

Instructions

  1. Cook rice noodles according to package instructions. Drain and rinse with cold water.

  2. In a large bowl, combine cooked noodles, shredded carrots, cucumber slices, bean sprouts, cilantro, green onions, and peanuts.

  3. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, minced garlic, grated ginger, and red pepper flakes.

  4. Pour the dressing over the noodle mixture and toss until well-coated.

  5. Serve immediately and enjoy!
