Ingredients

  • 8 oz noodles
  • 2 tbsp soy sauce
  • 2 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 cup sliced bell peppers
  • 1 cup sliced carrots
  • 1 cup sliced snap peas
  • 1 cup bean sprouts
  • 1 cup sliced cucumber
  • 1 cup sliced green onions
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped peanuts

Instructions

  1. Cook the noodles according to package instructions. Drain and set aside.

  2. In a small bowl, mix together soy sauce, sesame oil, and minced garlic.

  3. Heat a large skillet or wok over medium-high heat. Add the bell peppers, carrots, snap peas, and bean sprouts. Stir-fry for 3-4 minutes until vegetables are crisp-tender.

  4. Add the cooked noodles to the skillet and pour the soy sauce mixture over them. Stir-fry for an additional 2-3 minutes until noodles are heated through and well coated with sauce.

  5. Remove the skillet from heat and add the cucumber, green onions, cilantro, and chopped peanuts. Toss to combine.

  6. Serve the stir-fry noodle salad chilled or at room temperature.
