How To Make Ricotta & Spinach Gnudi

Ingredients

  • 1 cup ricotta cheese
  • 1 cup frozen spinach, thawed and drained
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup all-purpose flour
  • 1 egg
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg

Instructions

  1. In a large bowl, combine ricotta cheese, spinach, Parmesan cheese, flour, egg, salt, pepper, and nutmeg. Mix well until all the ingredients are fully combined.

  2. Scoop about 2 tablespoons of the mixture and shape it into a small oval dumpling. Repeat with the remaining mixture.

  3. Bring a large pot of salted water to a boil. Carefully drop the gnudi into the boiling water and cook for about 3-4 minutes, or until they float to the surface.

  4. Using a slotted spoon, transfer the cooked gnudi to a plate.

  5. Serve the ricotta and spinach gnudi with your favorite sauce, such as marinara or pesto. Enjoy!
