How To Make Nettle Gnudi with Wild Pesto

Ingredients
- 1 cup nettle leaves, blanched and chopped
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup all-purpose flour
- 2 eggs, beaten
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 cup pine nuts
- 2 garlic cloves
- 1 cup fresh basil leaves
- 1/4 cup extra virgin olive oil
Instructions

In a large bowl, combine the nettle leaves, ricotta cheese, Parmesan cheese, flour, eggs, salt, and black pepper. Mix well until smooth.

Bring a large pot of salted water to a boil.

Using wet hands, shape the gnudi mixture into small dumplings and drop them into the boiling water. Cook for about 2-3 minutes or until they float to the surface.

While the gnudi cook, make the wild pesto. In a food processor, blend the pine nuts, garlic cloves, basil leaves, and olive oil until smooth.

Drain the cooked gnudi and toss them with the wild pesto.

Serve the nettle gnudi with wild pesto and garnish with additional Parmesan cheese if desired.
