Ingredients

  • 2 large aubergines
  • 2 cups of spinach, chopped
  • 1 cup of ricotta cheese
  • 2 cloves of garlic, minced
  • 1/4 cup of grated Parmesan cheese
  • 1/4 cup of bread crumbs
  • Salt and pepper, to taste
  • Olive oil, for brushing

Instructions

  1. Preheat the oven to 400°F (200°C). Slice the aubergines lengthwise into thin strips.

  2. In a bowl, combine the chopped spinach, ricotta cheese, minced garlic, Parmesan cheese, bread crumbs, salt, and pepper.

  3. Place a spoonful of the spinach and ricotta mixture onto each aubergine strip and roll it up.

  4. Place the rolled aubergines in a baking dish and brush them with olive oil.

  5. Bake for 25-30 minutes, or until the aubergine rolls are tender and golden.

  6. Serve hot and enjoy!
