How To Make Aubergine rolls with spinach & ricotta

Ingredients
- 2 large aubergines
- 2 cups of spinach, chopped
- 1 cup of ricotta cheese
- 2 cloves of garlic, minced
- 1/4 cup of grated Parmesan cheese
- 1/4 cup of bread crumbs
- Salt and pepper, to taste
- Olive oil, for brushing
Instructions

Preheat the oven to 400°F (200°C). Slice the aubergines lengthwise into thin strips.

In a bowl, combine the chopped spinach, ricotta cheese, minced garlic, Parmesan cheese, bread crumbs, salt, and pepper.

Place a spoonful of the spinach and ricotta mixture onto each aubergine strip and roll it up.

Place the rolled aubergines in a baking dish and brush them with olive oil.

Bake for 25-30 minutes, or until the aubergine rolls are tender and golden.
