Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup orzo pasta
  • 1 can (14 oz) diced tomatoes
  • 2 cups vegetable broth
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving
  • Fresh basil leaves for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic and sauté until softened, about 3 minutes.

  2. Add the orzo pasta to the pot and cook for 1-2 minutes, until slightly toasted.

  3. Stir in the diced tomatoes, vegetable broth, dried basil, and dried oregano. Season with salt and pepper to taste.

  4. Bring the mixture to a boil, then reduce heat to low and cover the pot. Simmer for 15-20 minutes, or until the orzo is cooked and the liquid has been absorbed.

  5. Remove from heat and let the orzo sit for 5 minutes, then fluff it with a fork.

  6. Serve the tomato orzo hot, garnished with grated Parmesan cheese and fresh basil leaves.
