How To Make Courgette & Orzo Bake

Ingredients
- 2 courgettes, thinly sliced
- 250g orzo pasta
- 1 onion, diced
- 2 cloves of garlic, minced
- 400g tin of chopped tomatoes
- 2 tbsp tomato paste
- 1 tsp dried oregano
- 1 tsp dried basil
- 100g grated cheddar cheese
- Salt and pepper to taste
Instructions

Preheat the oven to 180°C (350°F).

Cook the orzo pasta according to the package instructions until al dente. Drain and set aside.

In a large pan, heat some olive oil and sauté the diced onion and minced garlic until softened.

Add the sliced courgettes to the pan and cook until they start to soften.

Stir in the chopped tomatoes, tomato paste, dried oregano, and dried basil. Season with salt and pepper.

Simmer the sauce for 10 minutes, allowing the flavors to blend together.

Stir in the cooked orzo pasta and mix well.

Transfer the mixture to a baking dish and top with grated cheddar cheese.

Bake in the preheated oven for 20 minutes or until the cheese is melted and bubbly.
