This easy one-pot meal is full of delicious Mediterranean flavors with orzo pasta, shrimp, lemon, and feta cheese.

  • 1 lb orzo pasta
  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 3 cups chicken broth
  • 1/4 cup lemon juice
  • 1 tsp lemon zest
  • 1/4 cup chopped fresh parsley
  • 1/4 cup crumbled feta cheese
  • Salt and pepper to taste


  1. Heat olive oil in a large pan over medium heat. Add chopped onion and minced garlic, sauté until softened.

  2. Add orzo pasta to the pan and cook until it starts to brown.

  3. Pour in chicken broth, lemon juice, and lemon zest. Bring to a boil.

  4. Add shrimp to the pan and stir frequently until shrimp turns pink.

  5. Reduce the heat and simmer for 10-15 minutes, or until orzo is al dente and the liquid is absorbed.

  6. Remove from heat, add chopped parsley and crumbled feta cheese.

  7. Season with salt and pepper to taste.

  8. Serve hot.
