Ingredients

  • 2 boneless, skinless chicken breasts, diced
  • 1 tbsp vegetable oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 tsp curry powder
  • 1 tsp ground turmeric
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • 4 cups chicken broth
  • 1 cup cooked rice
  • 1 cup coconut milk
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the diced chicken and cook until browned.

  2. Remove the chicken from the pot and set aside.

  3. In the same pot, add the diced onion and minced garlic. Sauté until the onion is translucent.

  4. Add the curry powder, turmeric, cumin, and coriander to the pot. Stir to coat the onions and garlic with the spices.

  5. Pour in the chicken broth and bring to a boil. Reduce heat and simmer for 15 minutes.

  6. Return the cooked chicken to the pot. Add the cooked rice and coconut milk. Stir well to combine.

  7. Simmer for an additional 10-15 minutes to allow the flavors to meld together.

  8. Season with salt and pepper to taste.

  9. Serve hot, garnished with fresh cilantro.
