Ingredients

  • 1 pound orzo pasta
  • 1/2 cup sundried tomatoes (chopped)
  • 1/2 cup kalamata olives (halved)
  • 1/4 cup olive oil
  • 1/4 cup white wine
  • 3 cloves garlic (minced)
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Cook orzo according to package directions and drain. Set aside.

  2. In a large skillet, heat olive oil over medium-high heat.

  3. Add garlic and red pepper flakes and cook for 1 minute.

  4. Add sundried tomatoes, olives, white wine, salt, and black pepper and cook for another 3-5 minutes.

  5. Add cooked orzo to the skillet and toss to combine.

  6. Top with crumbled feta cheese and chopped fresh parsley before serving.
