Ingredients
- 4 egg whites
- 1/4 cup of sugar
- 1/2 tsp of vanilla extract
- 2 cups of milk
- 4 egg yolks
- 1/4 cup of sugar for the custard
- 1/4 cup of sugar for the caramel sauce
Instructions

In a bowl, beat the egg whites until stiff peaks form. Gradually add the sugar and vanilla extract, and continue beating until glossy.

Fill a saucepan with water and bring it to a simmer. Using a large spoon, drop spoonfuls of the meringue mixture into the simmering water, gently poaching them until they are cooked through. Remove them with a slotted spoon and set aside.

In a separate saucepan, heat the milk until steaming. In a bowl, whisk together the egg yolks and sugar. Slowly pour the hot milk into the egg yolk mixture while whisking constantly. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens and coats the back of a spoon.

Divide the custard among 4 serving dishes. Place a poached meringue island on top of each dish of custard.

In a small saucepan, melt the sugar for the caramel sauce over medium heat until it turns golden brown. Drizzle the caramel sauce over the meringue islands.
