How To Make Amatriciana Chicken Traybake

Ingredients
- 4 chicken breasts, boneless and skinless
- 8 strips of bacon
- 1 onion, thinly sliced
- 3 cloves of garlic, minced
- 1 can (400g) diced tomatoes
- 1/4 cup tomato paste
- 1/4 teaspoon red pepper flakes (adjust to taste)
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded mozzarella cheese
- Fresh parsley, chopped (for garnish)
Instructions

Preheat your oven to 400°F (200°C) and lightly grease a baking tray.

In a large skillet, cook the bacon until crispy. Remove the bacon from the skillet and set aside on paper towels to drain excess grease. Crumble into small pieces once cooled.

In the same skillet, sauté the sliced onions until soft and golden. Add the minced garlic and cook for another minute.

Add the diced tomatoes, tomato paste, red pepper flakes, dried oregano, salt, and black pepper to the skillet. Stir well to combine and let simmer for 5 minutes.

Place the chicken breasts onto the prepared baking tray. Spoon the tomato sauce over the chicken, making sure to cover each piece.

Sprinkle the crumbled bacon on top of the sauce, followed by the shredded mozzarella cheese.

Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.

Remove from the oven and let rest for a few minutes before serving. Garnish with fresh chopped parsley.
