How To Make Easy Ratatouille

  • 1 eggplant, sliced
  • 2 zucchini, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 2 garlic cloves, minced
  • 4 tomatoes, diced
  • 2 tablespoons tomato paste
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste


  1. Preheat the oven to 375°F (190°C).

  2. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and sauté for 5 minutes until softened.

  3. Add the eggplant, zucchini, bell peppers, and tomatoes to the skillet. Cook for 10 minutes, stirring occasionally.

  4. Stir in the tomato paste, dried thyme, dried rosemary, salt, and pepper. Cook for another 5 minutes.

  5. Transfer the mixture to a baking dish and bake for 25 minutes until the vegetables are tender and the flavors are well-combined.

  6. Serve the ratatouille hot as a main course or as a side dish.
